Part 2. Unit 3: Food Intolerances. What are food intolerances? Describe the symptoms of lactose intolerance. Explain what causes lactose intolerance.
Food Intolerance occurs when a person has difficulty digesting a specific food or nutrients, causing unpleasant GI symptoms such as gas, bloating, flatulence, cramping and diarrhea. It is usually caused when the body is not producing enough of a particular digestive enzyme.
There is currently no cure for food intolerance, however the best way to curb these symptoms is to avoid certain foods or consume smaller amounts.
Lactose Intolerance is caused by not being able to produce enough of the enzyme’s lactase, which is responsible for digesting the milk sugar lactose into a single sugar molecule that can be absorbed into the small intestine.
Lactose that is not digested can’t be absorbed so it continues to the large intestines, where it draws more water and bacteria metabolize the lactose causing it to produce gas and acid production.
Lactose is a disaccharide; it consists of two sugars glucose and galactose.
People with lactose intolerances may developed the following symptoms such as gas, bloating and diarrhea within 30 minutes to two hours of consuming dairy foods.
About 65% of the world population is lactose intolerance, some foods that contain lactose are, butter, yogurt, ice cream, cheese, and milk etc.
People with lactose intolerance can take enzyme supplements or substitute dairy products for lactose free options. It is important to note that when removing dairy for your diet to substitute it with another source of calcium and vitamin D.

Sugar alcohols, also known as polyols, are carbohydrates that occur naturally in some fruits and vegetables. However, they can be manufactured, and despite their namesake it does not contain any ethanol. The FDA regulates the use of them and while they contain calories, they contain less calories than sugar. They tend to be added into processed foods like chocolate or chewing gum and generally not found in home kitchens (Mayo Clinic, 2020).
Novel sweeteners, on the other hand, are hard to fit into a category. This is due to how they are made and what they are made from. The FDA has approved the use of highly refined stevia, a plant, as a novel sweetener, however whole-leaf stevia nis not approved. Another novel sweetener is tagatose, due to it’s chemical structure, which is manufactured from the lactose in dairy products(Mayo Clinic, 2020).
Natural sweeteners tend to either have no carbohydrates or very little carbohydrates making them an attractive alternative as it can be used for weight control. In addition, some sweeteners do not raise blood sugar levels making it useful for people who have diabetes. However, they are not much healthier than sugar, since their vitamin and mineral content isn’t much different (Mayo Clinic, 2020).
